Blackberry Rice Pudding Recipe

Rice pudding makes us feel cosy and warm, and there's nothing better than feeling cosy and warm on a cold winters night.

This sensational blackberry rice pudding recipe can make you feel just that! Filled with seasonal berries, this easy pudding is a must throughout winter.

Servings: 4 people

Preparation time: 10 minutes

Cooking time: 45 minutes

You will need:

  • 150g Blackberries
  • 100g pudding rice
  • 1 vanilla pod, split
  • 1 tsp cinnamon
  • 650ml skimmed milk
  • 2 tbsp creme fraiche
  • 2 tbsp clear honey

Instructions:

  1. In a large saucepan, add the rice, split vanilla, half the cinnamon, and half the milk and heat it gently. Make sure it doesn't stick to the bottom of the pan by stirring regularly.
  2. Heat this for about 15 minutes, then add the rest of the milk. Keep it on a medium heat for another 15 minutes.
  3. As the rice becomes thick and creamy, remove the vanilla pod and stir in your creme fraiche and honey.
  4. Serve with your blackberries and sprinkle the rest of the cinnamon on top!
