Cooling Summer Cocktails: Rhubarb Collins Recipe
We've finally had a sneak peak of the weather we're promised this summer, and it looks like it's going to be a scorcher!
In between those long sunny days spent in the garden, it will be essential to stay hydrated. And how better a way to do that than with a tasty seasonal cocktail? Plus, it gives you a chance to use up that extra rhubarb you grew in your gardens this year. Perfect!
This recipe makes 1 glass, but simply double (or triple) the ingredients for multiple cups if you're entertaining.
Prep Time: 10 mins
Ingredients
Rhubarb Syrup:
- 100g white sugar
- 125ml water
- 3-4 rhubarb stalks
Cocktail Mix:
- 50ml gin
- 30ml rhubarb syrup
- Tonic or lemonade to top up
- Cut up strawberries & sliced limes to garnish
Method
- Cut up your rhubarb stalks and add it all to a pan with the rest of the syrup ingredients and bring to boil. Keep on the hob, stirring intermittently until the rhubarb becomes soft.
- Strain the rhubarb through a fine colander and into a jug or bowl to get the syrup. Squidge it down if it needs a bit of help. Leave to cool before adding it to your glass.
- Add your cocktail mix ingredients to your glass of choice, or if you're feeling a bit fancy, a cocktail mixer and shake till combined (without the tonic or lemonade).
- Top glass up with lemonade or tonic of choice and garnish the drink with some cut up strawberries, some sliced limes, and a few ice cubes.
Tasty Tips
If you're not a fan of either lemonade or tonic, you can replace these for champagne!
